Zesty Lemon-Chicken Salad Sandwiches

Chicken is added to a simple mayonnaise and lemon mixture for these quick-and-easy lunch sandwiches. Try multi-grain bread to add a healthy touch to this recipe.

    thin tomato slices, about 1 medium tomato

Directions
1.
In medium bowl stir together mayonnaise, onion, celery, lemon peel, and lemon juice. Add chopped chicken, stir to coat; set aside.
2.
Arrange lettuce leaves on 4 bread slices; top with tomato slices. Spoon chicken mixture on tomatoes; top with remaining bread slices. Serve immediately or wrap with plastic wrap and refrigerate up to 6 hours. Makes 4 servings.
Variation
  • TEST KITCHEN TIP: Serve this sandwich on multi-grain breads or hearty rolls.
