Zesty Lemon-Chicken Salad Sandwiches

3 tablespoonsfinely chopped red onionsee savings

3 tablespoonsfinely chopped celerysee savings

1 teaspoonfinely shredded lemon peelsee savings

2 teaspoonsfresh lemon juicesee savings

2 cupschopped, cooked chicken (reserved from No-Fuss Snack Mix Chicken, bones removed if present)see savings

8slices wheat bread, toasted if desiredsee savings

Romaine lettuce leaves, arugula or lettucesee savings

8thin tomato slices, about 1 medium tomatosee savings
Directions
1.
In medium bowl stir together mayonnaise, onion, celery, lemon peel, and lemon juice. Add chopped chicken, stir to coat; set aside.
2.
Arrange lettuce leaves on 4 bread slices; top with tomato slices. Spoon chicken mixture on tomatoes; top with remaining bread slices. Serve immediately or wrap with plastic wrap and refrigerate up to 6 hours. Makes 4 servings.
