  • 3 tablespoons finely chopped red onion
  • 3 tablespoons finely chopped celery
  • 1 teaspoon finely shredded lemon peel
  • 2 teaspoons fresh lemon juice
  • 2 cups chopped, cooked chicken (reserved from No-Fuss Snack Mix Chicken, bones removed if present)
  • 8 slices wheat bread, toasted if desired
  • Romaine lettuce leaves, arugula or lettuce
  • 8 thin tomato slices, about 1 medium tomato
