Ingredients
  • 1 tablespoon minced garlic
  • 3/4 cup low-fat yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 2 teaspoons kosher salt
  • 1 teaspoon ground coriander
  • 1/4 teaspoon pepper
  • 1 1/2 pounds skinless chicken breasts
Yogurt-Marinated Chicken and Mango Kabobs
  • 1 mango
  • 2 tablespoons Major Grey's Chutney
  • 1 tablespoon water
  • 1 tablespoon cider vinegar
  • 1 tablespoon canola oil
  • 1/2 cup chickepeas
  • 1 tablespoon flat-leaf parsley

  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 2 teaspoons Dijon mustard
  • 1 teaspoon cider vinegar
  • 2 cups slaw mix
  • 1 tablespoon honey
  • 2 tablespoons softened butter
  • Cayenne pepper
  • 6 biscuits

  • 4 cups watermelon, honeydew and cantaloupe
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup chopped pistachios
  • 1/4 cup crumbled feta
  • 2 tablespoons chopped mint

Directions
1. 
Combine garlic, yogurt, olive oil, Dijon mustard, lemon juice, Kosher salt, coriander and pepper.
2. 
Add chicken breasts to the marinade, cover and chill 1 to 4 hr.

Remove chicken and discard marinade. Grill until just cooked through (for boneless breasts, 4 to 5 min per side). Serves 4
Yogurt-Marinated Chicken and Mango Kabobs
1. 
Prepare 1 recipe Yogurt-Marinated Chicken, but cut boneless, skinless breasts into cubes before marinating.
2. 
When ready to cook, thread chicken onto skewers with pieces of peeled, diced mango; grill until cooked through, 10 to 12 min.
For the vinaigrette
1. 
Whisk together Major Grey's Chutney, water, cider vinegar, canola oil, canned chickpeas and chopped flat-leaf parsley. Drizzle over kabobs. Serves 4
Yogurt-Marinated Chicken Biscuits with Honey Butter and Slaw
1. 
Combine mayonnaise, sour cream, mustard and cider vinegar. Toss dressing with 2 cups slaw mix; season with salt and pepper, set aside.
Make honey butter:
1. 
Combine honey, softened butter and a pinch of cayenne pepper.
2. 
Grill 1 recipe Yogurt-Marinated Chicken.
3. 
Split in half 6 large, prepared buttermilk biscuits and spread with honey butter, then top with sliced chicken and slaw. Serves 6
