Wilted Greens with Pasta

The hot dressing and pasta wilt the spinach without cooking it. This keeps most of the vitamins and nutrients intact.

Ingredients

1/2 cuptiny ring macaroni (anelli) or tiny shell macaroni or other tiny pastasee savings

4 cupstorn fresh spinach or romainesee savings

-
1/4 cupsliced green onionssee savings

-
2 clovesgarlic, mincedsee savings

-
2 teaspoonscooking oilsee savings

2 tablespoonslemon juicesee savings

1 tablespoonsoy saucesee savings

-
1 teaspoonhoneysee savings

Dashground red peppersee savings

Directions
1.
Cook pasta according to package directions; drain well. Keep warm.
2.
Meanwhile, in a large serving bowl combine spinach and green onions.
3.
For dressing, in a small skillet cook garlic in hot oil for 1 minute. Add lemon juice, soy sauce, honey, and ground red pepper. Heat just to boiling.
4.
Pour hot dressing over greens. Add hot pasta; toss to mix well.
5.
Makes 6 side-dish servings.
