Whole Cranberry Chutney

Fresh cranberries, ginger, and raisins combine with savory seasonings to make this condiment that's meant to go with turkey or ham.

Ingredients

1-1/2 tablespoonsolive oilsee savings

4shallots, finely choppedsee savings

1-1/2 tablespoonsmustard seedssee savings

3/4 teaspoonhot pepper flakessee savings

2 bags (12 oz. each)fresh or frozen cranberriessee savings

1-1/3 cupssugarsee savings

1 cupgolden raisinssee savings

1/2 cupapple cider vinegarsee savings

2 teaspoonsfinely grated fresh gingersee savings

Directions
1.
Heat oil in a 3-quart heavy saucepan over moderate heat. Add shallots, mustard seeds, and pepper flakes; cook, stirring occasionally, until shallots are softened, about 5 minutes. Stir in remaining ingredients and simmer, stirring occasionally, until berries just begin to pop, about 7 minutes. Let stand until cool, then transfer to a serving bowl, and cover and keep chilled until ready to serve. Makes 4 cups.
