White Bean Chicken Chili

Fans of white chili will love this 30-minute recipe. Artichoke hearts and fresh tomatoes take this favorite in a new direction.

Ingredients

1 tablespoonolive oilsee savings

1 cupchopped onion, frozen or freshsee savings

-
2 teaspoonschopped garlic, jarred or freshsee savings

-
1-3/4 poundschicken tenders, cut into quarterssee savings

-
1packet (1.5 ounces) taco seasoning mixsee savings

-
1 cupwatersee savings

-
1 can(13.75 ounces) artichoke hearts, drained and cut into quarters (photo 2)see savings

-
1 cupdiced fresh tomatoessee savings

-
1 can(15 ounces) white beans, drained and rinsedsee savings

-
1 tablespoonchopped fresh cilantro (optional)see savings

Directions
1.
In 12-inch straight-sided skillet, heat oil over medium-high heat. Add onion; saute until softened, 3 to 5 minutes.
2.
Add the garlic, chicken and 1/2 teaspoon of the taco seasoning mix to the onion; cook until the chicken is no longer pink, about 5 minutes.
3.
Stir the remaining taco seasoning and water into the chicken mixture. Bring to boiling. Add the artichoke hearts, tomatoes and beans; simmer, uncovered, 5 minutes. Garnish with chopped fresh cilantro, if desired. Makes 6 servings.
