White and Wild Rice with Tomatoes
Grains of white and wild rice mingle with stewed tomatoes and herbs in this low-fat recipe.

Makes 6 side-dish servings.
Ingredients

2 cups water
-
1/4 teaspoon salt

1/3 cup wild rice, rinsed and drained

1/2 cup long grain rice

1 14-1/2-can stewed tomatoes, cut up

1/2 teaspoon dried basil, crushed

1/2 teaspoon dried thyme, crushed

1/8 teaspoon pepper
-
1 clove garlic, minced
-
1/3 cup plain low-fat yogurt (optional)
Directions
1.
In a medium saucepan heat water and salt to boiling. Add wild rice; reduce heat. Cover and simmer for 20 minutes.

Stir in long grain rice. Return to boiling; reduce heat. Cover and simmer for 15 to 20 minutes more or until all rice is tender.

Meanwhile, in a small saucepan combine undrained tomatoes, basil, thyme, pepper, and garlic. Bring to boiling; reduce heat. Simmer, uncovered, for 15 minutes or until mixture is very thick. Remove from heat.
4.
Add tomato mixture to rice; mix well. Serve at once. Garnish each serving with yogurt, if desired.
