A simple, fresh, salad for summer.

Watermelon Salad

  • 1/3  cup 
    olive oil
  • 3   tablespoons 
    red wine vinegar
  • 1/4  cup 
    minced fresh cilantro
  • 1/2  teaspoon 
  • 1/2  teaspoon 
    freshly ground pepper
  • 1   
    small red onion, vertically cut into thin slivers
  • 8   cups 
    peeled and cubed (1 inch), cold seedless watermelon
  • 1/2  cup 
    goat cheese crumbles
Whisk olive oil, vinegar, cilantro, salt, and pepper in a large bowl. Add onion, and toss.
Cover and let stand 30 minutes. Add watermelon and goat cheese crumbles; toss well.
