Watermelon Salad

A simple, fresh, salad for summer.

  • 1/3  cup olive oil
  • 3   tablespoons red wine vinegar
  • 1/4  cup minced fresh cilantro
  • 1/2  teaspoon salt
  • 1/2  teaspoon freshly ground pepper
  • 1   small red onion, vertically cut into thin slivers
  • 8   cups peeled and cubed (1 inch), cold seedless watermelon
  • 1/2  cup goat cheese crumbles
