  • 4  pounds  red potatoes, washed and sliced 1/8 inch thickOn Sale
  • 1  pound  bacon, cooked and crumbledOn Sale
  • 2    shallots, peeled and sliced 1/8 inch thickOn Sale
  • 1/4  cup  white-wine vinegarOn Sale
  • 1/4  cup  olive oilOn Sale
  • 3  tablespoons  whole-grain mustardOn Sale
  • 2  teaspoons  chopped fresh tarragonOn Sale
  • 1  teaspoon  kosher saltOn Sale
  • 1  teaspoon  coarsely ground black pepperOn Sale

Directions
1.
Place potatoes in a 6-quart saucepan. Add enough cold water to cover potatoes. Bring to a boil over high heat.

Cook for 5 minutes. Remove from heat and strain. Cover potatoes with ice until completely cooled.
3.
In a large bowl, combine potatoes, bacon, and shallots; set aside.
4.
In a small saucepan, combine vinegar, olive oil, mustard, tarragon, salt, and pepper, whisking to combine. Cook over medium heat until hot. Pour over potato mixture, tossing to coat. Serve immediately.
