Hearty Beef Stew with Roasted Winter Vegetables
This hearty beef stew is good for you thanks to lean beef and lots of vegetables, yet it tastes just like traditional versions.
-Hey everybody, I'm Holly and in my home we are all about comfort food. So I wanna show with you a recipe today that my family loves, it's hearty beef stew with roasted winter vegetables. Sound delicious? It is. So, let's get started. First, I'm gonna pre-heat the oven to 425 degrees. Okay, now we're gonna roast our vegetables. Fresh vegetables are so delicious and they're so good for you. We've got parsnips, carrots, butternut squash and sweet potatoes, my favorite and we're gonna have onions, I love onions. Look at all those colors so vibrant, so pretty and so good for you. And then we just drizzle olive oil over the top, just mix this up, we're gonna roast because roasting brings out such a great flavor in the vegetables. Now it's time to brown our beef. Little olive oil in there, drizzle and I chose a boneless sirloin steak, it's a leaner kind of meat and it's healthier. Whenever I kinda like to cook meals at home because it's just a healthier choice for my family and I know it goes in the dish. Okay, our vegetables are gorgeously roasted and the meat is brown and now it's time to put everything together. Okay, now we're gonna add our chicken stock. And you can choose low sodium which is a healthier choice for your family and then we're gonna add dry red wine, now all our spices. And really the herbs and spices what make this dish come alive. So we have here a McCormick coarse ground pepper, thyme, mom's need as much thyme as they can get and sprinkle salt around there and then 3 bay leaves. We're gonna mix this all together or you can already start to smell the flavor. And remove the bay leaves and now it's ready to serve up and you can serve it over a whole grain pasta or rice or just as it is. It's such a great dish to introduce fresh veggies into your family's diet and with the low sodium and the leaner meat. It's a delicious healthier dish your family will love, mind does.
