How to Make Stuffed Peppers

Sweet peppers are the containers of this delicious combination of vegetables and rice in this stuffed peppers recipe. These are perfect for dinner or to bring to a potluck.

-Hey everyone, I'm Judith, well today, we'll be making Stuffed Peppers, a fantastic dinner dish to share with the family. So, what you will need for this is a half a cup of chopped onion; 2 cloves of garlic minced; 2 teaspoons of olive oil; 2 14-ounce cans of reduced sodium chicken broth; 1-1/2 cups of brown rice; 1/2 teaspoon of dried oregano, crushed; 1/2 teaspoon of ground black pepper; 1/4 teaspoon of salt; 1/8 teaspoon of paprika; 1 14.5-ounce can of diced tomatoes, drained; 1 11-ounce can of whole peeled corn with sweet peppers, drained; 2 tablespoons of sift fresh cilantro; and 8 small green, yellow, and or red sweet peppers. We'll just gonna use a nice mixture of the peppers. Alright, so in our large saucepan next to us, let's get it to a medium high heat and we're gonna add in our oil, get it nice and hot. Once our oil is hot, we're gonna add in our onion, and our garlic, and we're just gonna cook them until they are nice and tender about 5 minutes. So, our onions and garlic are nice and tender now. So, next step is add in our broth, in there goes, and we will bring that up to boiling. So, let it boil there and then we'll add in our other ingredients, nice. So, our broth is boiling. So, now, let's add in our uncooked rice, our oregano, paprika, let's just gonna give it a lovely scent, and of course our salt and pepper in there. Give that a good stir. Oh, smells amazing already. Alright, now, we're gonna turn the heat down, put the lid on, and we're gonna let that simmer for about 40 minutes until the rice is cooked through. So, our rice mixture has been simmering for 40 minutes, looking good. So now, what we're gonna do is add in our tomatoes, our corn, and our cilantro, really fresh, lovely Mexican flavors there, very nice. Alright, give that a good stir, and with the rice, and that is looking vibrant colorful, really nice. Okay, so, in our baking dish here we have our peppers. Now, we have taken off the tops of our peppers and cored, so we've taken now all the seeds from the middle. So, they are ready now. We'll keep our tops with us and all we gonna do is stuff our peppers with this rice mixture, so in there goes. So, we're gonna do the same thing with our remaining peppers just stuff them with this rice mixture and when stuffed, we're gonna add our little tops on top. Now, we preheated our oven to 400 degrees Fahrenheit. So, they are gonna go in the oven now for 30 minutes at 400 degrees Fahrenheit. Alright, so our stuff peppers have been in the oven for 30 minutes. They are out now. The peppers should be lovely wrinkled and cooked through with the rice. So, that is ready to serve up. What a great dinner dish. So, that's how you make stuffed peppers.
