How to Make Bread Pudding
When you want a dessert that's both homey and delicious, learn how to make bread pudding. Serve it warm, topped with ice cream or whipped cream, and you've got a treat that the family will rave about.
-Hi everybody, it's Chef Lovely here, and today we're gonna make a delicious and quick dessert. So, let's get the ingredients for our Raisin Bread Pudding with Whiskey Sauce: 3 cups of French bread cut into cubes; 2/3 cups of sugar; 1/4 cup of butter; 2 eggs; 1 cup of whipping cream; 3 tablespoons of raisins; 2 teaspoons of vanilla; 3/4 cups of sugar; 2 teaspoons of cornstarch; a dash of brown cinnamon or nutmeg; 3/4 cup of whipping cream; 1-2 tablespoons of Bourbon Whiskey. Okay, so let's begin this delicious bread pudding. So, I'm gonna take my cubes of bread here and I'm going to make sure that they are evenly distributed over the bottom of our pan here. Okay and as you can see, I have pan where my bread pudding is gonna cook and then I have pan that's gonna hold it. We're gonna pour some very hot water in here so that we create a nice warm bath as it cooks in the oven. So, I'm gonna show you how we do that a little bit later. So, let's set this aside. Okay, so for the next part of our recipe here, we're gonna use a large mixing bowl and we are gonna cream together our butter with our 2/3 cup of sugar. Let's go ahead and get that in. And I have my hand mixer here. So, let's go ahead and cream these 2 together. Here we go. Okay, so we've creamed together here our butter and our sugar. Now, we're going to incorporate our eggs, next. So, let's go ahead and drop that in, and let's continue to mix it. Okay, this looks wonderful. So, we have our butter, our sugar, and our eggs well combined in our bowl here. I'm gonna scrape down the side making sure that we get all of our ingredients well incorporated here. Give it a quick little stir. Now, we are going to stir in our whipping cream. This is gonna add some rich fatty flavor. We also gonna add in our raisins and our vanilla. Okay. So, let's go ahead and give this a stir just to incorporate those 3 in ingredients that we just added in just like this. So essentially, we're making a custard batter and when we pour over our bread in a few seconds as it goes into the oven, we're gonna see it's gonna come together as a 1 mass of just deliciousness. So, this is our custard here, fantastic. So, we've given this a really nice mix. So, I'm gonna bring over my bread here, and we are gonna pour this right on top. Make sure those raisins are evenly distributed over the entire bread pudding here going with my spatula. Make sure we're getting all of this delicious batter in here, okay. So, I'm gonna take the back of my spatula and just give a nice little press down here. We wanna make sure that each little piece of bread is completely soaked in that vanilla and raisin custard that we just made. Okay, that looks great. So, now that we have all our ingredients here for our bread pudding, we're gonna pour in enough of very hot water to fill it up about 1 inch up the sides and we're gonna put it into our preheated oven of 325 degrees and we're gonna let this bake for about 40 to 50 minutes or until it comes out nice and clean and you have knife and you cool it up. So, while this is baking, I'm gonna show you how we're gonna make our whiskey sauce. So, let's go ahead and pop this in the oven. Okay, everybody, so as you can see, our bread pudding is out of the oven and it looks absolutely delicious. The top is nice and golden brown. The raisins have plumped up and it looks wonderful. So, this is just part 1. Now, we have to make our delicious whiskey sauce that will go along with it. So, let's set this aside. Let's go ahead and sauce pot on a medium heat here, okay, and we're gonna add in cinnamon and sugar and to thicken up our sauce, we'll also gonna add a little bit of corn starch. Corn starch is ideal. A lot of people say you can use flour. When you use flour for a sauce like this, it's gonna leave kind of a white kind of beige color on top of our sauce and we do not want that. Cornstarch is gonna melt and be nice and clear. So, our sauce is gonna be a beautiful rich brown color, which is what we want. Okay, so let's go ahead and go in with our sugar and our cinnamon, and then our cornstarch. Okay, so let's give this a stir. We just wanna incorporate all of those ingredients together, fantastic, okay. Next up, we're gonna add in our whipping cream. So, let's go ahead and pour that in and let's give is a stir. So, the cornstarch is gonna thicken our sauce. We wanna incorporate that cream with our sugar. So, I wanna really give it a nice stir here, and this is gonna start to thicken for us. Okay, so while this is cooking, I wanna go ahead and serve up some of our delicious red pudding here. So, I'm gonna go in for few scoops just like this. Okay, then to our bowl here. This looks really good and it's best if it's served nice and warm right out of the oven. Okay, there we go. Let's check on our sauce here. It's bubbling and it's getting nice and thick. This is what we're looking for. This is about the texture and consistency that we want. As soon as it starts to boil and bubble up for you just like you here, you know that this is how thick your sauce is gonna be. The corn starch has done its job, okay. Now, let's turn off the heat. Then, wanna bring here on my cutting board. Now, it's time to get a little nuttier. We're gonna add in our whiskey like this. So go ahead and pour it in. Make sure it's off of the heat or the heat is off on your stove here just like that, okay. As soon as it hits the heat, you can smell that whiskey and there we go. Our sauce is done 1, 2, 3 and we're done, okay, fantastic. So, let's go ahead and take this. We're just gonna drizzle it right now top of our bread pudding. How great is that, look great. A little scoop of ice cream on whip cream will be delicious on here or just by itself with our whiskey sauce. Fantastic. Okay, so there you go, we have our bread pudding with our whiskey sauce.
