How to Make Cake Mix Cookies
Whoopie pies have made a big comeback on the dessert scene (cupcakes, move over!) Learn how to make these cake mix cookies; your friends and family will thank you.
-Hey, everybody. It's Chef Lovely. And today, we are going to make a fun, delicious desert treat. We are going to make of a classic and nostalgic Whoopie Pies. Here are the ingredients. 1 box of chocolate cake mix; 3 eggs; 1/2 cup of vegetable oil; 1/4 cup of cocoa powder; 1-1/4 cups of vanilla frosting; and 1-1/4 cups of frozen whipped topping that has been thawed. Okay, everybody. So, let's get started. So, here in a bowl, I have my cake mix. Use your favorite brand that you love, okay? And then, we also have our oil here. We're going to put that right in. This is going to keep our whoopie pies nice and moist while they're baking. And now, let's go ahead. Let's crack in 3 eggs right into our bowl. Okay, so there our 3 eggs that are right here. And, we'll have our hand mixer here. This is going to make life much easier for you. So, we're going to start mixing this on low just to get all of our ingredients going for about 30 seconds. Then, we're going to bump up the speed and we're going to blend it for about 2 more minutes so our batter is nice and creamy and it's thick and it's mixed together. So, here we go. Okay, so we've just mixed this for about 30 seconds. Now, I'm going to add in the cocoa powder which is going to give an even more deep chocolatey flavor which we absolutely love. And then, we're going to mix this for about 2 more minutes so that everything is well combined. So, here we go. I know it's looking a little thick but that's exactly what you want. Don't be nervous right now, okay? So, we're getting nice and thick here. We have our cocoa powder that's well incorporated and we're going to get these on the sheet pan. So, I have a baking sheet here. It's already been sprayed with a little bit of non-stick cooking spray so that our whoopie pies come right off. Here's a little Chef Lovely Tip. Take a 1 tablespoon measuring spoon here and we are going to dip it in and we're going to put them right here on our sheet tray. We're going to bake these for about 10 minutes. But, halfway through the cooking, we're going to take it out and we're going to rotate our pan that they cook evenly for, okay? So, it's okay. Just use your finger. Kind of go in there to help scoop out the filling just like that, okay? So, here are two great examples of how your whoopie pie mixture should look. We're going to put this in at 350-degrees and it's going to cook for only 10 minutes. Halfway through, I want you to take it out. Rotate that pan and make sure that our whoopie pies are evenly cooked. And then in 10 minutes, whoopie pies will come out like perfection. So, I'm going to go and pop this in the oven. And when we come back, I'm going to show you how we're going to finish off these delicious chocolate whoopie pies. Okay, so we've taken our whoopie pies out of the oven. As you can see, they're beautiful. They're a little bit cracked on top and they have a soft cake kind of consistency which is what you're looking for. So, we're having whoopie pies. Of course, we have to stuff those whoopie pies with something absolutely delicious. So, I have some cool whipped topping here that has been thawed and I also have some vanilla frosting. So, we're going to put this right into our bowl and we're going to give this a mix together. So, the-- the vanilla frosting has all, of course, the flavor and it's nice and thickened rich but to lighten it up a little bit, this is where this cool whipped topping comes into place. So, we're going to put that in. Now, all we have to do is give it a stir. Now, at this point, you have a blank canvass so you can add in any flavors that you like. If you want to toast in some fresh fruit like strawberries or pineapples, that will absolutely be delicious. If you're chocoholic like me, you can even take some chocolate chips or even white chocolate chips and fold it in as well. So, the sky is the limit. Have fun with it. Okay, so we're just going to take our spoon and keep on mixing until we get a nice smooth consistency. Fantastic. We're almost there. Okay, great. So, now, all we have to do is build our whoopie pies here. Okay, so let's now build these whoopie pies. So, I'm going to take one just like this and we're going to spoon on our topping just like that. Doesn't that look delicious? Okay, and then to finish making our whoopie pies, we're just going to take another one and we're going to just dip and kind of squeeze and there you go. You have a delicious whoopie pies. So, here we go. I'm going to make one more. So, I'm taking about-- I would say a tablespoon of our mixture here just like this. Delicious. And then, we're going to put on our topping just like that to make a little sandwich of whoopie pie. So, here we go. So, like I said, this is easy. This is delicious and fun.
