Hi everyone, I'm Judith. Well, today, I'm gonna be showing you how to make a Mexican Chicken and Four Cheese Quesadilla. I really love this one. So what you'll need is 2 tablespoons of Mexican Four Cheese Salsa con Queso; 1/8-inch flour tortilla, warmed; 2 tablespoons of chopped cooked chicken; 2 tablespoons of prepared guacamole or diced avocado. Today, we'll be using guacamole. 1 tablespoon of diced red pepper, vegetable cooking spray, chunky salsa, and some sour cream. Alright. So let's get our flour tortilla and our Mexican Four Cheese Salsa con Queso. What we're gonna do is put that in the middle and spread it around, leaving about a half an inch from the sides. Very nice. Alright. Now, very, very simply, we're just gonna build up our quesadilla. So, a little bit of chicken on there. Perfect. Our peppers and our guacamole can go on that too. Beautiful. Alright. So, once all that is on there, let's just get a little bit of water and with your fingers, just go around the edges of your tortilla and that's just gonna help seal it a little. Alright. Now, we'll do a quick fold over like so. So it's just like a half-moon shape, so they're together. Perfect. So, in our skillet next to us, we've sprayed it with our vegetable spray. We've got it to a medium heat. We're just gonna place our quesadilla onto the pan until it gets lightly browned or all the ingredients inside are melted in. So, it's been about 4 minutes and our quesadilla is done. Nice, lightly browned on the outside. And that's served up with a little bit of sour cream and chunky salsa is just perfect. So there you go.
