Hi. I'm Miranda Valentine with Recipe.com and, today, I'm gonna show you how to make Glazed Carrots. So I've got our ingredients all laid out here. We have 2-1/2 cups of like half-inch sliced carrots. Now, we have crinkle cut but you could use plain sliced as well. Whatever you have will work just fine. We have 3 tablespoons of orange marmalade. You could also use ginger preserves in place of if you prefer it. Then we have 2 tablespoons of thawed orange juice concentrate; 1 teaspoon of freshly grated ginger, it's gonna give it such a nice zing; and then we have 1 tablespoon of unsalted butter. Now, over here, to my right, I have a medium saucepan with about an inch of lightly salted water boiling. Because the first step to this recipe is to cook my carrots in this boiling water, just dump these right in, with lid on, and just give this a little shake to make sure, perfect, it's all evenly dispersed, and we're gonna pop the lid back on and we're gonna cook this with the lid on just boiling a little bit for about 3 minutes and then we'll come back. Okay, so my carrots cooked for 3 minutes in the lightly salted boiling water and I've drained them. They're sitting over here, so while they kind of hang out in my little colander, I'm going to finish the process, so that is to put the butter in the saucepan, and let that melt up a little bit, then the delicious orange marmalade, our ginger...and then the thawed orange juice concentrate, and we're just gonna pop the heat back on here, just on like medium, and we're just gonna stir these together and just continue to do so until that butter's melted. It will just take just under a minute, if event that. Just stir this around, make sure this lovely glaze is all mixed together, smells so sweet and so good, the orange marmalade, the thawed orange juice concentrate, you're just getting this delicious sweet orangy flavor. Okay. Now, let's add our carrots back into the saucepan. Beautiful. Now we're just gonna toss this around. And we are going to let it cook on medium heat uncovered for 5 to 6 minutes or until the carrots are nice and tender and perfectly glazed, so we'll come back then. Okay, so it's been 5 minutes. Check out this delicious glaze I have going on here. I'm gonna turn the heat off, so you see how all that yummy juice kind of reduced and is just clinging to these carrots? So we are ready now to pop this on our plate, let's just put it on here. Beautiful, beautiful. So these carrots are gonna be nice and tender. So that's how you make glazed carrots.
