Vegetables in Spicy Sour Cream

This side dish recipe spices up cool, crisp vegetables with a smooth sour cream sauce.

Ingredients

1/2 cupdairy sour creamsee savings

1 tablespoonwhite wine vinegar or lemon juicesee savings

1 teaspoonsugarsee savings

1/2 teaspoonsaltsee savings

1/8 teaspoonground red peppersee savings

1small yellow summer squash or zucchini, sliced (1 cup)see savings

1/2of a small cucumber, halved lengthwise and thinly sliced (1 cup)see savings

1/2of a small red onion, thinly sliced and separated into ringssee savings

-
1medium carrot, cut into thin stripssee savings

-
2 tablespoonsdiced pimiento or red sweet peppersee savings

Directions
1.
In a medium bowl stir together sour cream, vinegar or lemon juice, sugar, salt, and ground red pepper.
2.
Add squash, cucumber, red onion, carrot, and pimiento or red sweet pepper; toss to coat. Cover and chill vegetable mixture for 2 to 24 hours, stirring often.
3.
Stir before serving. Serve with a slotted spoon. Makes 4 side-dish servings.
