Vegetable Medley

Zucchini, sweet red peppers, and corn make for a pretty side dish that is great for holiday dinners or anytime entertaining.

Ingredients

1 tablespoonbuttersee savings

1 tablespoonolive oilsee savings

1 smallonion, dicedsee savings

-
2 clovesgarlic, mincedsee savings

-
1/2 teaspoonItalian seasoningsee savings

-
1-1/2 poundszucchini, thinly slicedsee savings

-
1 largered pepper, seeded and cut into thin stripssee savings

-
3/4 cupchicken brothsee savings

-
1/4 teaspoonsaltsee savings

-
1/8 teaspoonpeppersee savings

-
1 can(8-3/4 ounces) corn kernels, drainedsee savings

Directions
1.
Heat butter and olive oil in a large skillet over medium-high heat. Add onion; cook until soft, about 6 minutes.
2.
Stir in garlic and Italian seasoning; cook 1 minute more. Stir in zucchini and pepper strips; cook 5 minutes, stirring frequently. Add broth, salt, and pepper; cook, stirring frequently, 10 to 15 minutes more, until squash is soft. Stir in corn; cook just long enough to heat through.
