Turkey Tenderloin with Bean-and-Corn Salsa
Ready-made black bean and corn salsa, and red jalapeno pepper jelly, make this six-ingredient recipe quick and easy.

Ingredients

2 turkey breast tenderloins (about 1 pound total)

Salt

Ground black pepper

1/4 cup red jalapeno chile pepper jelly

1-1/4 cups purchased black bean and corn salsa

2 tablespoons fresh cilantro leaves
Directions

Preheat broiler. Split each turkey breast tenderloin in half horizontally. Place turkey on the unheated rack of a broiler pan. Season with salt and pepper. Broil 4 to 5 inches from heat for 5 minutes.

Meanwhile, in a small saucepan, melt jelly over low heat. Remove 2 tablespoons of the jelly. Turn turkey; spoon the 2 tablespoons jelly evenly over turkey. Broil for 4 to 6 minutes more or until tender and no longer pink (170 degree F).

Transfer turkey to a serving plate. Spoon remaining jelly over turkey; cover and keep warm. In a small saucepan, heat salsa. Spoon salsa over turkey. Sprinkle with cilantro. Makes 4 servings.
