Turkey Salad on Cucumbers

Use up leftover turkey for these appetizers. Just mix with apples and a mayonnaise sauce, then place on top of cucumber slices. It's easy!

  • 1/2  cup  finely chopped cooked turkey or chicken (about 3 ounces)On Sale
  • 1/2  of a small  apple, chopped (1/3 cup)On Sale
  • 2  tablespoons  low-fat mayonnaise dressingOn Sale
  • 1  tablespoon  chutney (snip any large fruit pieces)On Sale
  • 1  tablespoon  snipped fresh chives or sliced green onionOn Sale
  • 1/2  teaspoon  grated fresh ginger or 1/8 teaspoon ground gingerOn Sale
  • 1/4  cup  chopped macadamia nuts, cashews, or peanutsOn Sale
  • 24    1/4-inch-thick cucumber slicesOn Sale

Directions
1.
In a small bowl, combine turkey, apple, mayonnaise dressing, chutney, chives or green onion, and ginger. Cover and chill for 2 hours. Just before serving, stir in half of the nuts.
2.
To serve, spoon a scant tablespoon of the turkey mixture onto each cucumber slice. Sprinkle with remaining nuts. Makes 12 appetizer servings.
