Grilled turkey cutlets make a delicious salad when tossed with apple, walnuts, and greens. Better yet, this main-dish salad can be ready in 20 minutes.

    cider vinegar

  • 1/2  cup
    olive oil

  • turkey cutlets (4 ounces each)

  • 12  cups
    assorted salad greens

  • cored and sliced Granny Smith apples

  • 1/3  cup
    walnuts

Directions
1.
Heat gas grill to high or prepare charcoal grill with hot coals or heat broiler. In a small bowl, whisk vinegar, mustard, sugar, salt and pepper. Slowly whisk in olive oil until smooth. Set aside 1/2 cup of the dressing.
2.
Brush the turkey cutlets with 1/4 cup of the dressing. Grill or broil for 3 minutes per side until cooked through. Set aside.
3.
In a large bowl, toss together the salad greens, apples, walnuts and the reserved 1/2 cup of the dressing. Divide the salad among four plates. Slice cutlets into 1/2-inch-wide strips and divide among plates. Serve extra dressing on the side.
