Turkey and Bean Tostadas

  • 1  box
    (14.5 ounces) Old El PasoŽ soft taco dinner kit

    lean (at least 93%) ground turkey or lean (at least 80%) ground beef

    water

  • 1  can
    (15 ounces) spicy chili beans in sauce, undrained

  • 3  cups
    shredded romaine lettuce

  • 1  cup
    shredded Monterey Jack cheese (4 ounces)

  • 1/4  cup
    fresh cilantro, chopped, if desired

  • 1/2  cup
    sour cream, if desired

Directions
1.
Heat oven to 350 degrees Fahrenheit. On ungreased cookie sheets, place tortillas (from dinner kit). Bake about 7 minutes or until crisp. Place on individual plates.

In 10-inch nonstick skillet, cook turkey, stirring occasionally, until no longer pink; drain. Stir in seasoning mix (from dinner kit), water and beans; heat until hot.
3.
Divide turkey mixture evenly among tortillas. Top with taco sauce (from dinner kit) and remaining ingredients.

Tips:
Set up a make-it-yourself tostado bar with all the toppers like lettuce, cheese, cilantro, and sour cream.
