Triple Turkey-Rice Skillet

Ingredients

1/3 cup chopped onion

1/2 of a medium yellow, green, or red sweet pepper, seeded and cut into 1-inch pieces

6 slices turkey bacon, chopped

1 tablespoon cooking oil

3-1/4 cups water

6 ounces cooked smoked turkey sausage, cut into 1/2-inch slices

1-1/2 cups uncooked regular brown rice

2 teaspoons bottled hot pepper sauce

1 teaspoon dried rosemary, crushed

1/2 to 1 teaspoon ground black pepper

1/4 teaspoon salt

2 cups cubed cooked turkey

Warm buttered French bread slices (optional)

Bottled hot pepper sauce (optional)
Directions

In a large saucepan cook onion, sweet pepper, and turkey bacon in hot oil until tender. Stir in the water, turkey sausage, rice, the 2 to 3 teaspoons hot sauce, the rosemary, black pepper, and salt. Bring to boiling; reduce heat. Cover and simmer for 45 to 50 minutes or until rice is tender and most of the liquid is absorbed. Stir cubed cooked turkey into rice mixture; heat through. Serve with bread and additional hot sauce, if desired. Makes 5 or 6 servings.
