Rhubarb

A slender stalk vegetable that is served as a fruit. The stalks may be green with red overtones or light pink to cherry red in color with green overtones. Rhubarb is too tart to be enjoyed raw. Cooked and sweetened, rhubarb has a sweet-sour fruity taste reminiscent of apricot, strawberry, and lemon.
