(pah TAY) Pate is a rich, well-seasoned ground mixture that's made from meat, liver, game, fish, vegetables, or a combination of these, and usually is baked. Pate can be soft enough to spread or firm enough to slice. It can be shaped, molded, or encased in pastry. The texture of pate can vary from a fine, smooth liver pate to a coarse, chunky pate that is more like meat loaf. Sometimes the texture and appearance of a pate are varied by adding one or more layers of another ingredient, such as vegetable strips.
