Mole

(MO lay) A Mexican sauce made with chili peppers and tomatoes, which may or may not be spicy, depending upon the chilies used. Although there are many types of mole, one of the most popular is mole poblano, a spicy red sauce that includes unsweetened chocolate and often is served over turkey. Another type, green mole, contains green chilies and cilantro.
