Manicotti
(man uh COT ee) A pasta made from a square or rectangle of noodle dough that is cooked in boiling water, drained, filled with a meat or cheese mixture, a sauce and baked. Manicotti are distinctive in that they are rolled up diagonally from comer to corner.Commercially made manicotti are sold as dried tubes that may be either smooth or ridged and are ready to cook and fill.
