Chicory

Typically, a variety of salad green that forms a head with crisp, frilly, narrow, dark green leaves that curl at the edges. Chicory has a pleasantly bitter tang and a prickly texture. Chicory roots can be ground into a coffee substitute, which also is called chicory.
