Lentil Minestrone Soup Recipe
I had a cold last week. I'm better now, but there were a few days there when I was pretty much certain that I was going to choke to death on my own snot. (lovely, just lovely, steph...) Anyway. I really wanted a soup to soothe my throat and to make me feel loved and taken care of. Since I'm home during the day with an almost-three-year-old, there wasn't anybody available to make me soup, so I did it myself (I promise I washed my hands really well first!). But by the time it was finished cooking, I was back to bed, and was served ---- complete with a Thomas the Tank spoon. I love my family. and you'll love this soup. It's easy to throw together, uses household staples, and freezes and reheats VERY well. I kept it vegetarian, but Adam suggests I throw in a hambone next time. Sliced smoked sausage would be awesome, too. If you'd like a soupier soup, add more broth 30 minutes or so before serving. The Ingredients. serves 6 2 cups lentils, rinsed 1/2 cup diced celery 1/2 cup diced carrot 1 onion, peeled and diced 4 cloves garlic, minced 1 (28-ounce) can diced tomatoes (with juice!) 1 tablespoon Italian seasoning 2 teaspoons paprika 1/2 teaspoon kosher salt 1/2 teaspoon black pepper 2 cups hearty torn greens, like kale or chard (if you'd prefer spinach, stir in before serving) 4 cups vegetable or chicken broth ( optional: add another 1 to 2 cups of broth if you'd like before serving) The Directions. Use a 6-quart slow cooker. Put the rinsed lentils into the bottom of an empty insert. Add the diced celery, carrot, onion, and garlic (if you have a food processor, it might be helpful to use). Add the entire can of diced tomatoes, and add the seasonings and torn greens. Stir in the broth (I used chicken, but any broth will work just fine). Cover, and cook on low for 8 to 10 hours, or until the lentils are soft. If you'd like to stretch this to feed more, or for a thinner soup, feel free to add more broth. Serve with grated Parmesan cheese , if desired, and a hunk of garlic bread. The Verdict. gonna be showing you how to make a Classic Baked Macaroni and Cheese , the quintessential comfort food. So, what you're gonna need is 1 quart of whole milk which we've heated. We have in here 2 cups of sharp white cheddar cheese mixed with 1 cup of Monterey Jack Cheese . We have 1 pound of elbow macaroni pasta, uncooked. We have 1/2 cup of freshly grated Parmigiano Reggiano. We have 1 mediumbe eating those ones. So, now it's time to add in our cheese . So, we're gonna be adding in our sharp cheddar cheese and our Monterey Jack. So, we'll add that in until it all melts, so give it a good stir in the mixture and that's gonna produce a lovely cheesy thick mixture for our macaroni, delicious. So, let's stir that all in there until it melts. So, as that cheese is melting, let's add in our dash of Tabasco, to give it a good little kick and Worcestershire sauce and we can stir that in and that's gonna give some great flavor to our sauce. So, our macaroni pasta is now ready, we've drained it in the colander, we put it in our large pot again and all we'll gonna do now is add in our cheese mixture to our macaroni, so we're gonna stir that all together. So, once all of that is melted which is just aboutsprayed with cooking spray and now we're just gonna add this beautiful macaroni- cheese mixture. So, we'll pour all of that into there-- and Mac and Cheese is such a great recipe because it's economical. It's not expensive to get these ingredients and it goes a long way. Look -

I'm gonna be showing you how to make some Slam Dunk Chilli Cheese Dip. If you're having your friends over, this is the one to make. So, what you'll need for this is 2 15 oz cans of chilli with beans; 1 8 ounce package of cream cheese , softened; 4 ounces of pepper jack velveeta cheese , chopped; 1 10-ounce can of hot tomatoes with green chillies, drained; and some black, chopped olives to garnish with. Alright, so first things first, let's get our chilli made. So, in goes the beans into a large mixing bowl right here, and we're just gonna add in our other ingredients. So, the cream cheese goes on there too, very indulgent nice little dip. Our velveeta cheese goes in there too. This is a derivative of Monterey Jack cheese , but they put a little bit of hot spicy peppers in there to spice things up. So, it's really nice cheese to put in there for a dip, and our tomatoes. Alright, so mix that all around, make sure we get that cream cheese softened and within all of the other ingredients. Give it a good stir. That looks good already. So what we're gonna dothe oven for 15 minutes of 350 degrees Fahrenheit. so our chill cheese dip has come out from the oven. It's nice and hot, looking gorgeous and smelling fantastic.
