Tomato Saute

You'll love this easy side dish with fresh tomato flavor, savory thyme, and mild mozzarella. Best of all, the recipe can be prepared in just 30 minutes.

Ingredients

2-1/2 cupswhole red grape tomatoes, yellow pear tomatoes, cherry tomatoes, and/or small yellow tomatoessee savings

1 Tbsp.olive oilsee savings

-
1/4 cupfinely chopped onionsee savings

-
1 clovegarlic, mincedsee savings

-
1 tsp.snipped fresh thymesee savings

-
1/4 tsp.saltsee savings

-
1/4 tsp.black peppersee savings

-
2 oz.fresh mozzarella, cut into 1/2-inch cubessee savings

Directions

Halve the grape, pear, and/or cherry tomatoes or cut small yellow tomatoes into wedges; set aside. Place a large skillet on grill side burner. In skillet, heat oil over medium heat for 2 minutes. Add onion, garlic, and thyme; cook and stir for 2 to 3 minutes or until onion is tender.

Add tomatoes, salt, and pepper. Cook and stir for 1 to 2 minutes or until tomatoes are just warmed. Remove from heat. Stir in mozzarella cheese. Makes 4 servings.
