Tomato and Red Pepper Crostini Spread
A little goes a long way. Dried tomatoes add an intense flavor to this easy-to-fix spread. For a quick sauce, also try tossing into hot cooked pasta to serve with fish or chicken.

Ingredients

1 cup purchased roasted red sweet peppers, drained

1/3 cup drained oil-packed dried tomatoes

1/3 cup crumbled ricotta salata cheese

1/3 cup walnuts

2 cloves garlic, quartered

2 tablespoons red wine vinegar

2 tablespoons Italian flat-leaf parsley leaves

1/4 teaspoon cayenne pepper

Toasted baguette slices
Directions

Place sweet peppers, tomatoes, cheese, walnuts, garlic, vinegar, parsley, and cayenne pepper in a food processor. Cover and process with several on-off turns (pulse) until desired consistency. Serve immediately spread on toasted baguette slices. Makes 1-1/2 cups or 24 (1-tablespoon) servings.
