Tomato and Avocado Salsa

Chopped avocado cools the heat in this fresh tomato salsa recipe. Serve it with chips as an appetizer or with grilled meats as a sauce.

Ingredients

2ripe tomatoes (about 12 ounces), cored and finely choppedsee savings

1/4 cupfinely chopped red onionsee savings

1/4of a jalapeno chile, finely dicedsee savings

1/4 cupfinely chopped cilantrosee savings

-
1 to 2 tablespoonsfresh lime juicesee savings

-
1 tablespoongrated lime zestsee savings

-
1 tablespoonolive oilsee savings

-
1 teaspoonsaltsee savings

-
1ripe avocado, halved lengthwise and pit removedsee savings

-
Tortilla chips for servingsee savings

Directions
1.
In a small bowl, mix together tomato, red onion, jalapeno and cilantro; set aside. Add lime juice and zest, olive oil and salt to tomato mixture; stir to combine.
2.
With the tip of a knife, score each half of the avocado flesh into a small dice and scoop out with a spoon. Gently fold into tomato mixture. If not serving immediately, press plastic wrap directly onto the surface of the salsa and refrigerate. Stir before serving.
