Tomato and Avocado Salsa

  • ripe tomatoes (about 12 ounces), cored and finely chopped

    finely chopped cilantro

  • 1 to 2  tablespoons
    fresh lime juice

  • 1  tablespoon
    grated lime zest

  • 1  tablespoon
    olive oil

  • 1  teaspoon
    salt

  • ripe avocado, halved lengthwise and pit removed

    Tortilla chips for serving

Directions
1.
In a small bowl, mix together tomato, red onion, jalapeno and cilantro; set aside. Add lime juice and zest, olive oil and salt to tomato mixture; stir to combine.
2.
With the tip of a knife, score each half of the avocado flesh into a small dice and scoop out with a spoon. Gently fold into tomato mixture. If not serving immediately, press plastic wrap directly onto the surface of the salsa and refrigerate. Stir before serving.
