Three-Pepper Slaw
Oil and vinegar dress this coleslaw variation. Use a combination of sweet peppers for a colorful mixture.

Ingredients

3 medium red, yellow, orange, and /or green sweet peppers, cut into thin strips

1 cup shredded cabbage

1/4 cup currants or raisins

2 green onions, sliced

1/4 cup white wine vinegar

3 tablespoons salad oil

2 to 3 tablespoons sugar

Few dashes bottled hot pepper sauce (optional)
Directions

In a large mixing bowl combine sweet peppers, cabbage, currants or raisins, and green onions.

For dressing, in a screw-top jar combine wine vinegar, oil, sugar, and, if desired, hot pepper sauce. Cover and shake well. Pour the dressing over the pepper mixture, tossing to coat. Cover and chill for 2 to 24 hours. Stir before serving. Makes 4 servings.
