Three-Bean Chili 'n' Biscuits
Chopped bacon gives smoky flavor to this spicy budget-minded chili. Use the biscuits to soak up every last drop.

Ingredients

2 tablespoons vegetable oil

6 slices bacon, chopped

1 large onion, chopped

2 large sweet green peppers, cored, seeded and chopped

1 can (28 ounces) crushed fire-roasted tomatoes

3 tablespoons chili powder

2 teaspoons ground cumin
-
2 teaspoons dried oregano
-
1-1/2 teaspoons garlic salt

2 cans (15.5 ounces each) pinto beans, drained and rinsed

2 cans (15.5 ounces each) red kidney beans, drained and rinsed
-
1 can (15.5 ounces) black beans, drained and rinsed

1 large package refrigerated buttermilk biscuits, optional
Directions

In large saucepan, heat oil over medium-high heat. Add bacon; saute 3 minutes. Add onion and peppers; saute until softened, about 5 minutes.

Add tomatoes and their juice, chili powder, cumin, oregano, garlic salt and beans; stir to combine. Simmer 10 minutes.

Meanwhile, bake biscuits as directed. Serve with chili if desired. Makes 12 servings.
