Thai Peanut Noodles

Ingredients

  • 8 ounces vermicelli
  • 1 tablespoon sesame oil (substitute canola oil if you don't have this on hand)
  • 4 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons chili garlic sauce
  • 1/4 teaspoon minced ginger
  • 1/2 cup green onions
  • 1/2 cup crushed dry roasted peanuts (optional)
Directions
1. 
Cook vermicelli until al dente, approximately 8-10 minutes. Cool noodles.
2. 
Stir together sesame oil, soy sauce, rice vinegar, chili garlic sauce, and minced ginger until combined.
3. 
Toss noodles in peanut sauce, top with green onions and crushed peanuts.
