Directions
1.
Make Poppy-Seed Dressing: Combine sugar, mustard, and salt in a blender. Add vinegar and onion; pulse until smooth. With blender at medium speed, pour oil through opening in lid until smooth. Add poppy seeds and blend a few seconds more. (Can be made ahead. Store in an airtight container in refrigerator up to 1 week.) Makes 1 cup.

Arrange grapefruit, avocado and watercress on 4 serving plates; drizzle each with 1 tablespoon dressing. Makes 4 servings.
