  • 2  medium  sweet potatoes, peeled and cut into about 2x1/2-inch slices (about 2 cups)On Sale
  • 2  medium  Granny Smith apples, cored and sliced or cut into 1 1/2-inch piecesOn Sale
  • 1  large  pear, cored and sliced or cut into 1-1/2-inch piecesOn Sale
  • 1  large  red onion, coarsely choppedOn Sale
  • 2  tablespoons  honeyOn Sale
  • 3/4  teaspoon  pumpkin pie spiceOn Sale
  • 1/4  cup  chopped pecans, toastedOn Sale

Directions

Preheat oven to 375 degrees F. Lightly coat a 15x10x1-inch baking pan with nonstick cooking spray; set aside.

In a large bowl, combine sweet potatoes, apples, pear, and red onion. Stir in honey and pumpkin pie spice. Spoon mixture into prepared pan.
3.
Bake, uncovered, for 35 to 40 minutes or until sweet potatoes are tender, stirring occasionally. Sprinkle with pecans before serving.
