Ingredients
  •  Nonstick cooking spray
  • 4   small pork loin rib chops, cut 3/4 inch thick
  • 2   medium sweet potatoes, peeled and cut into 1-inch cubes (3 cups)
  • 1   small onion, sliced and separated into rings
  • 1/2  cup orange juice
  • 1   medium cooking apple, cored and chopped
  • 1/4  cup maple-flavored syrup or honey
  • 1/4  cup raisins
  • 1/2  teaspoon ground cinnamon
  •  Salt
  •  Pepper

Directions
1. 
Coat a large oven-going skillet with cooking spray. Trim fat from chops. In a skillet, brown chops on both sides over medium heat. Remove chops from skillet.
2. 
Add sweet potatoes, onion, and orange juice to skillet. Bring the mixture to boiling.
3. 
Stir in apple, syrup, raisins, and cinnamon. Top with chops; sprinkle with salt and pepper. Cover and bake in a 350 degree F oven about 35 minutes or until pork chop juices run clear. Makes 4 servings.
