    sweet potatoes (about 4 medium)

    packed brown sugar

    honey

    lemon juice

    ground cinnamon

    ground nutmeg

Directions
1.
Peel sweet potatoes. Cut off woody portions and ends. Cut into quarters. Cook, covered, in enough boiling salted water to cover for 15 to 20 minutes or until tender; drain. Cool slightly.

Place drained sweet potatoes in a food processor bowl. Cover and process until smooth. Add the bananas; cover and process until smooth.

In a large saucepan stir together the sweet potato-banana mixture, brown sugar, honey, lemon juice, cinnamon, salt, ginger, and nutmeg. Bring to boiling; reduce heat. Cook, uncovered, over very low heat about 30 minutes or until very thick, stirring frequently.

Place the saucepan in a sink filled with ice water to cool the sweet potato mixture. Spoon cooled mixture into storage containers. Cover and store in the refrigerator for up to 3 weeks. Makes about 4 half-pints butter.

To Present This Gift...
Fill glass canning jar and wipe the outside of the jar clean. Place a paper napkin over the lid. Screw on the lid and trim napkin evenly around the ring with pinking shears. Fill the loaf pan with shredded paper. Nestle the jar in the pan.
