Sweet Potato and Spinach Salad

    small onion, very thinly sliced
  • 1   tablespoon 
    extra-virgin olive oil
  • 1   tablespoon 
    orange juice
  • 1 1/2  teaspoons 
    unsweetened unseasoned rice wine vinegar
  • 3/4  teaspoon 
  • 1/4  teaspoon 
    ground pepper
  • 1   
    medium sweet potato, peeled
  • 4   cups 
    packed spinach leaves
  • 1   
    small red bell pepper, cut into matchsticks
Combine onion, oil, juice, vinegar, salt, and pepper in a bowl.
Cut potato into 1/2-inch dice. Put potato dice in a small saucepan with enough lightly salted water to cover and bring to a boil.
Cook until tender but not mushy, about 8 minutes. Drain in a colander.
In a large bowl, toss potato, spinach and pepper with dressing.
Serve immediately.
