Sweet Potato and Carrot Casserole with Streusel Topping

Carrots add a unique twist to this staple of the holiday table.

Ingredients

  • 1 1/2 cups mashed sweet potatoes (approximately 1.5 lbs)
  • 1 1/2 cups carrots, cooked and mashed (approximately 1.5 lbs)
  • 1/2 cup brown sugar
  • 1/3 cup apple sauce
  • 2 eggs, lightly beaten
  • 1/2 teaspoon vanilla
  • 3 tablespoons milk
  • 1/4 cup melted butter
Streusel Topping
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1/2 cup chopped pecans
Directions
1. 
Preheat oven to 350 degrees F. In a large mixing bowl combine first eight ingredients. Pour into a 2-quart casserole dish prepared with a nonstick cooking spray.

In a small mixing bowl, stir together the topping ingredients. Sprinkle topping over the sweet potato and carrot mixture. Bake for 30-40 minutes or browned and hot.
