Sweet 'n' Sour Sloppy Joes

When the kids are hungry and you need dinner on the table now, Sloppy Joe's can do the job. In this 20-minute version, ground chicken is used instead of ground beef and the sauce is a flavorful mix of barbecue sauce and tomato sauce.

    ground chicken

    tomato sauce

    bottled barbecue sauce

  • hamburger buns or soft rolls

Directions
1.
In a medium-size skillet or saute pan, heat oil over medium to medium-high heat. Add red pepper, scallions, garlic, Italian seasoning and pepper. Cook 4 minutes, stirring frequently.

Add ground chicken. Continue to cook, breaking apart with a wooden spoon, for 4 minutes, until no longer pink.
3.
Stir in tomato sauce, barbecue sauce and sugar. Simmer 3 minutes, until slightly thickened. Remove from heat and spoon into hamburger buns or rolls. Serve with chips, if desired.
