Summer Fruits with Ricotta Dip
This citrus-flavored ricotta-cheese dip makes a welcome summertime dessert recipe to serve for outdoor buffets and barbecue parties.

Ingredients

1/3 cup nonfat ricotta cheese

2 tablespoons sugar

1 teaspoon finely shredded lemon or orange peel

1 tablespoon orange juice

1/3 cup vanilla low-fat yogurt
-
2 cups sliced plums, cubed cantaloupe, cubed honeydew melon, dark sweet cherries, and/or strawberries
Directions

For dip, in a blender container or food processor bowl combine ricotta cheese, sugar, lemon or orange peel, and orange juice. Cover and blend or process until smooth. Stir cheese mixture into the yogurt. If desired, cover and chill dip up to 24 hours.

Serve with assorted fresh fruit. Garnish dip with additional finely shredded orange peel, if desired. Makes 4 servings.
