Stuffing and Ham Hash

Ingredients

1/2 poundPaula Deen Breakfast Sausagesee savings

3 cupscooked Smithfield ham, torn into large piecessee savings

1 tablespoonolive oilsee savings

1medium onion, choppedsee savings

1/2 cupleeks, choppedsee savings

-
2 cupscooked sweet potato, chunkssee savings

1 teaspoonsmoked paprikasee savings

-
1 tablespoonhot sauce + more for servingsee savings

3 cupsleftover stuffingsee savings

-
1/4 cupparsley, choppedsee savings

-
Salt and peppersee savings

6fried eggs, sunny side up or to your liking, for servingsee savings

Directions
1.
In a large skillet over medium high heat, add the olive oil and sausage. Cook the sausage until lightly browned, breaking it up with a wooden spoon as it is browning. Add the onion and leeks to the skillet and cook an additional 5 minutes.
2.
Add the ham, sweet potatoes, smoked paprika, hot sauce, stuffing, and parsley. Stir until combined. Heat through. Salt and pepper to taste.
3.
In a separate large skillet, cook six eggs sunny side up or to your personal liking. To serve, top each serving of hash with a fried egg.
