    olive oil

  • medium onion, chopped

  • 1/2  cup
    leeks, chopped

  • 2  cups
    cooked sweet potato, chunks

  • 1  teaspoon
    smoked paprika

  • 1  tablespoon
    hot sauce + more for serving

    leftover stuffing

  • 1/4  cup
    parsley, chopped

  • fried eggs, sunny side up or to your liking, for serving

Directions
1.
In a large skillet over medium high heat, add the olive oil and sausage. Cook the sausage until lightly browned, breaking it up with a wooden spoon as it is browning. Add the onion and leeks to the skillet and cook an additional 5 minutes.
2.
Add the ham, sweet potatoes, smoked paprika, hot sauce, stuffing, and parsley. Stir until combined. Heat through. Salt and pepper to taste.
3.
In a separate large skillet, cook six eggs sunny side up or to your personal liking. To serve, top each serving of hash with a fried egg.
