Streusel-Topped Apple Muffins

Serve these cinnamon and clove spiced muffins with mugs of warm apple cider.

    • 2 1/4 cups all-purpose flour
    • 1 tablespoon baking powder
    • 3/4 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 1/8 teaspoon ground cloves
    • 1 egg
    • 1/2 cup granulated sugar
    • 1/4 cup vegetable oil
    • 1/2 teaspoon vanilla extract
    • 1 cup sweetened applesauce
    • 2 cups diced apple
    • 1/4 cup (1/2 stick) butter, at room temperature
    • 1/2 cup walnuts, chopped
    • 1/3 cup packed light-brown sugar
    • 1/3 cup all-purpose flour
    • Confectioners sugar (optional)

    This breakfast staple is easy to make with a variety of flavors. Learn how to make muffins and you will be able to whip up a Sunday breakfast in no time.

    Heat oven to 375 degrees F. Coat standard-size muffin pan with 12 indentations with cooking spray.
    In large bowl, mix flour, baking powder, cinnamon, salt, cloves.
    In medium-size bowl, whisk egg, sugar, oil and vanilla. Add applesauce.
    Make well in center of dry ingredients. Pour egg mixture into well; stir just until dry ingredients are moistened. Fold in diced apple. Divide among 12 muffin cups (1/3 cup each).
    In clean bowl, mix butter, nuts, sugar and flour until crumbly. Sprinkle over tops of muffins.
    Bake in 375 degree F oven until toothpick inserted in centers comes out clean, 22 to 25 minutes. Let cool in pan 5 minutes. Remove muffins to wire rack; let cool. Sprinkle with confectioners sugar just before serving, if desired. Makes 12 servings.
