  • 2    large yellow squash, grated and squeezed dryOn Sale
  • 2    large zucchini squash, grated and squeezed dryOn Sale
  • 2    carrots, gratedOn Sale
  • 1/4  cup   finely chopped red bell pepperOn Sale
  • 2    green onions, finely choppedOn Sale
  • 1/2   cup   distilled white vinegarOn Sale
  • 1/4  cup   sugarOn Sale
  • 1/2   teaspoon  saltOn Sale
  • 1/2   teaspoon  ground black pepperOn Sale
  • 1/4  cup   vegetable oilOn Sale

Directions
1.
In a medium bowl, combine squashes, carrots, bell pepper, and green onions.

In a small bowl, combine vinegar, sugar, salt, and pepper. Whisk until sugar is dissolved. Gradually add oil, whisking until well blended.
3.
Add vinegar mixture to squash mixture, stirring to combine well. Cover and refrigerate for 1 hour.
