2 tablespoonsextra-virgin olive oilsee savings

1 tablespoonred wine vinegarsee savings

2 cupsfresh baby peas or thawed frozen baby green peassee savings

1/2small red onion, cut into 1/4-inch dicesee savings

-
1 cuploosely packed mint, tornsee savings

-
Kosher salt and freshly ground peppersee savings

Directions
1.
In a bowl, whisk the olive oil with the vinegar. Add the peas, red onion and mint and toss to coat. Season with salt and pepper and let stand at room temperature for 1 hour. Transfer to a platter and serve.
