Split Pea Soup
Add salt pork for extra flavor in this classic simple high fiber soup.

Ingredients

8 ounces split peas

2-3/4 cups water

2 ounces salt pork, chopped

1 onion, chopped

Directions

Rinse 8 ounces dry yellow split peas. Combine peas, 2-3/4 cups water, 2 ounces chopped salt pork, 1 chopped onion, 1 chopped carrot, 1 bay leaf, 2 tsp. dried parsley flakes and 1/2 tsp. dried basil.

Simmer, covered, 1 hour.

Season with salt and pepper. Makes 4 servings.
