Directions
1.
Preheat oven to 350 degrees. Lightly grease a 13-x-9-x-2-inch baking dish; set aside.
2.
Drain spinach well, pressing between layers of paper towels; set aside.
3.
In a large skillet, cook onion, red bell pepper, and mushrooms in olive oil over medium heat until tender; set aside.
4.
In a large bowl, whisk together eggs, nutmeg, salt, and white pepper. Add spinach, cooked vegetables, and cheese; stir. Pour mixture into prepared baking dish.
5.
Bake for 25 to 30 minutes, or until lightly browned. Cool for 10 minutes. Cut into squares to serve.
