Ingredients
  • 1  12-inch
    thin-crust Italian bread shell (10-ounce Boboli) or Italian flat bread (12-1/2-ounce focaccia)

    shredded Monterey Jack cheese with jalapeno peppers or Monterey Jack cheese (8 ounces)

  • 1  15-ounce can
    black beans, rinsed and drained

    whole kernel corn with red and green peppers, drained

  • 2  to 4 tablespoons
    chopped pickled jalapeno peppers (optional)*

Directions
1.
Preheat oven to 425 degree F. Place crust on an ungreased pizza pan or baking sheet. Sprinkle with half of the Monterey Jack cheese, all of the black beans, the drained corn, and, if desired, jalapeno peppers. Top with remaining cheese.
2.
Bake about 20 minutes or until heated through and cheese is melted. Let stand 5 minutes. Cut into wedges to serve. Makes 6 servings.

Note
Hot peppers contain oils that can burn eyes, lips, and sensitive skin, so wear plastic gloves while preparing them and be sure to wash your hands thoroughly afterward.
