Recipe from Taste of the South
6 ears fresh corn with husks
1 recipe Chipotle Butter (Recipe follows.)
1/2 cup butter, softened
1 tablespoon chipotle pepper in adobo sauce, minced
1 tablespoon chopped fresh cilantro
1/2 teaspoon ground cumin
1 tablespoon fresh lime juice
Remove heavy outer husks from corn; pull back (but do not remove) inner husks. Remove and discard silks, leaving ears exposed. Place corn in husks in a large pot, tub, or sink with enough water to cover. Soak for 30 minutes before grilling. Drain corn and pat dry.
Meanwhile, preheat grill to Medium-High (350 to 400 degrees F).
Coat corn cobs lightly with cooking spray.
Position corn on grill so husks hang over edge to avoid burning.
Grill corn, covered with grill lid, over direct heat for approximately 10 minutes, turning occasionally, or until done. Serve immediately with Chipotle Butter.
In a small bowl, combine all ingredients, stirring until blended.
