Spicy Chicken & Mushrooms
This recipe is for those who prefer a little heat in their main dish. Garlic, ginger, and red pepper flakes add an interesting combination of flavors to this 30-minute recipe.

Ingredients

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon minced ginger

2 cups sliced mushrooms

4 scallions, sliced

1/2 teaspoon red pepper flakes

1/2 teaspoon each salt and black pepper

1 pound boneless, skinless chicken breasts, cut into 1/2-inch pieces

1-1/2 tablespoons low-sodium soy sauce

1 tablespoon rice vinegar

1/2 cup chopped cilantro

3 cups cooked rice (optional)
Directions

Heat oil in a medium-size skillet over medium heat. Add garlic and ginger to pan; cook 1 minute. Stir in mushrooms, scallions, red pepper flakes and 1/4 teaspoon each of the salt and pepper; cook 3 minutes, stirring often.

Reduce heat to medium. Add chicken to pan and sprinkle with remaining 1/4 teaspoon each salt and pepper. Cook, stirring, for 4 minutes or until cooked through.

Stir in soy sauce, vinegar and cilantro; cook 2 minutes. Serve with rice, if desired.
